Every year I make a variety of twists for the winter, and then I open them with great pleasure. Thanks to the beans, the dish turns out to be very satisfying and nutritious, and the addition of other vegetables makes it also vitamin-rich. Beans cooked in this way go well with any side dish and can also be eaten on their own.

- Eggplant - 2 Kilograms
- Tomatoes - 1.5 Kilograms
- Bulb - 1 Kilogram
- Bell Pepper - 1 Kilogram
- Red Hot Pepper - 2 Pieces

- Granulated sugar - 1.5 Art. spoons
- Sunflower oil - 350 Milliliters
- Beans - 0.5 Kilogram

How to cook "Monastery beans with vegetables for the winter"

1. I wash the eggplants well and cut them into small cubes, put everything in a large bowl and sprinkle with salt, fill with water and leave for 40-60 minutes to release the bitterness. I put the pan on the fire, pour sunflower oil into it. I heat it up, spread the eggplant and fry it, then transfer it to a large saucepan.

2. I clean all the onions. Mine it, cut it into cubes and fry it in a pan, then transfer it to the eggplant.

3. My carrots and peel, then grind with a coarse grater, fry in a pan and send them to the rest of the vegetables in the pan.

4. My pepper, cut and peel from seeds, then cut into cubes and fry in a pan, send to the pan.

5. I cut my tomatoes and cut them into small pieces, send them to the pan and stew a little, then, like the rest of the vegetables, send them to the pan.

6. Mix all the fried vegetables in a saucepan, add salt (3 tablespoons) and sugar, peeled red hot peppers to taste, pour in the remaining sunflower oil and cook over low heat for about 20-30 minutes, stirring occasionally.

7. Pre-boil the beans until almost cooked, then add them to the rest of the vegetables, mix and cook for 20-30 minutes.

8. I sterilize the jars, put the salad in them, put them tightly and roll them up, wrap them in a warm blanket and cool them down, then put them in the pantry for storage.
