Cooking description:
Usually svichkova is served with dumplings. They are prepared from dough kneaded in milk and egg with wheat flour. The dough is rolled into a sausage, cut and boiled.
Also, a circle of lemon is added to the dish before serving, on which a spoonful of thick sour cream is laid out. A spoonful of sour jam is poured onto sour cream: cranberry or lingonberry.

Ingredients:
- Beef tenderloin - 500 grams
- Onions - 2 Pieces
- Large carrots - 1 Piece
- Celery - 1 Piece (root)
- Clean water - 1 Glass
- Vinegar - 1 Tbsp. the spoon
- Cream - 2 Tbsp. spoons
- Cinnamon - 1 Pinch
- Salt - 1 Pinch
- Lingonberry jam - 1 tbsp. spoon (or cranberry)
- Black pepper, red - To taste

How to cook "Svichkova with sour cream"

Wash the beef tenderloin, dry and beat lightly. Cut the ham or bacon into long cubes about a centimeter thick. Wrap the sticks in the beef, making a roll. Rub this roll with salt, a mixture of peppers and cinnamon. Fry it in a pan with vegetable oil until golden brown, and then bake it in the oven at 180 degrees for 25 minutes.

Peel the carrots and celery, then chop them into large wedges. Lightly fry these vegetables in a saucepan in vegetable oil. The vegetables should be soft.

Then add a glass of water, a pinch of salt, and vinegar to the saucepan. Cook the vegetables, stirring occasionally, until the water is half evaporated. Then grind the mass with a blender so that it becomes homogeneous. Add cream there, stir everything and rub through a sieve.

Cut the beef roll into slices about two centimeters thick. Put the vegetable puree on the bottom of the dish so that it completely covers the bottom. Put the meat on one part of the dish, and fill the second part with dumplings.
