And in this recipe I want to tell you how to cook squash caviar without a meat grinder. This process will not take much more time and effort, but the result is worth it. The caviar looks appetizing, as you can see the pieces of vegetables from which it is prepared. The main rule when cooking squash caviar in any way is a long stewing process. If you do not adhere to the sterilization time, then jars with such tasty contents will simply explode. So follow the recipe and you will have great squash caviar.

Ingredients:
- Young zucchini - 1-2 Pieces
- Sweet pepper - 2 pieces
- Tomato - 2-3 Pieces
- Onions - 2 Pieces
- Peppercorns - 2-3 Pieces
- Salt - 2/3 Art. spoons
- Vegetable oil - 1 tbsp. the spoon

How to cook "Zucchini caviar without a meat grinder"

Prepare the required ingredients. Rinse all vegetables thoroughly, let the water drain. Cut the pepper into quarters, remove the seeds and stalks. Peel the onions and zucchini.

Cut the onion into small cubes.

Cut the courgettes into small cubes and salt. Leave it on for 30 minutes for them to drain the juice.

Cut the tomatoes into slices, then chop too. You should have small cubes.

Cut sweet peppers in the same way as zucchini.

Pour vegetable oil into the pan, heat well. Add chopped onion. Pass until it becomes transparent.

Add pepper next, fry it for a few minutes.

Now it's the turn of the zucchini. Lightly squeeze the sliced zucchini from the resulting juice, send them to the pan. Simmer, covered, until the courgettes are tender. It will take about 20 minutes.

Then add the tomatoes, peppercorns, cover and simmer over low heat for another 10 minutes.

Cook the caviar until the tomatoes are completely boiled and color the rest of the vegetables.

Divide the caviar into sterilized jars. Cover with boiled lids and set to sterilize. Over low heat from the moment the water boils - 15 minutes. Remove the jars from the pan and seal tightly while still hot. Then turn over and leave in this position until cooled completely. The squash caviar is ready!
