How to cook "Chocolate mushrooms"

1. Using a mixer, beat eggs with sugar until stable peaks. For best results, use eggs at room temperature. If it doesn't work, use only proteins and sugar, adding a pinch of citric acid. Place the white mass in a culinary bag.

2. Cover the baking sheet with paper, use a bag to form an even number of "details" for mushrooms: part of the round (mushroom caps) and part - stretched up. We bake for 20 minutes at 180 degrees.

3. Melt the chocolate. When the meringue is ready and slightly hardened, cut off the upper sharp part of the "legs". We dip the "hats" in chocolate and mold them to the "legs".

4. I additionally greased the top with protein cream and sprinkled with cinnamon. But you can also leave the brown "hats". Done!
