- Canned tomatoes - 150 grams (without skin in their own juice)
- Vegetable oil - To taste
- Garlic - 2 Cloves
- Parsley - 1 To taste
- Oregano - 1 To taste
- Salt - 1 To taste
- Pepper - 1 To taste

How to make "Eggplant Fast"

We wash the eggplants, cut into slices and put in salted water for 10 minutes. Then we rinse again, cut into cubes and fry in vegetable oil.

Grind the tomatoes through a sieve and add to the eggplant. Also add chopped garlic, oregano, pepper and salt to taste. Bring the dish to a boil and remove from heat.

Chop the parsley finely and sprinkle over the eggplant. Bon Appetit!
