Any other fish can be made according to this recipe. But, in any case, it must be fresh.

1. First, cut off whatever you can, remove the skin and select the bones. In large carp, these are ribs and some "forks" on the back.

2. Cut the resulting fillet into finger-sized pieces and put the carp in a saucepan.

3. Dilute vinegar with 4 tablespoons of 70% essence plus 800mg of water.

4. Pour the mixture over the fish so that it should completely cover the meat.

5. Chopped greens, turnips, salt, pepper, do not forget about the main thing - cilantro, without it anywhere, put all this in a saucepan.

6. Since the recipe for carp heh contains soy sauce, add a little more paprika (not hot), red hot pepper.

By the way, it is better to take all the spices ground, so that then nothing "foreign" gets caught on the teeth. But the red pepper, you can cut it into rings.

7. Cut the onion into rings or half-rings, sauté it in a large amount of vegetable oil.

8. While all this is being done, the carp will be marinated.

9. Drain the vinegar, preferably through a colander, and put the fish in a pan in layers. Each layer, sprinkling with spices, sautéed onions, herbs, you can add cucumbers, but this is not for everybody.

10. Fill all this beauty with salty soy sauce to the top, so that the fish is saturated with it, while adding a little vegetable oil.

11. Put the pan in the refrigerator and wait, at least for a day, and it is best to do this at night.

I will not presume to say whether this is a classic recipe for making he from carp, but my husband really likes it.
