How to cook "Lamb kebab"

So. We take a lamb thigh. Cut off the pulp from it.

Wash the pulp and remove the tendons and excess fat.

Finely chop the meat with a hatchet until the consistency of minced meat. You can turn it on in a meat grinder, but we do it like in the east.

We also finely chop the fat tail fat (you can also take pork)

Add lard, spices (cumin and coriander), herbs (preferably cilantro) to the minced meat, salt and pepper.

Knead the minced meat well. Without excess liquid, it will be ready to form kebab in 10-15 minutes.

We form not very thick sausages on skewers (if we cook on the grill) or on skewers for the oven.

We cook the kebab either in the oven at 200 degrees, or on the grill until golden brown. Lula kebab is juicy and aromatic. For garnishing, cut the onion into rings, sprinkle with vinegar and mix with herbs. Done!
