Beets go well with a variety of nuts, of which there are a great many now on store shelves. So why limit yourself to only walnuts? Once upon a time, indeed, others were not available, but today you can make a delicious salad of beets, for example, with pistachios. The guests will be surprised!

- Beets - 2 Pieces
- Goat cheese - 100 Grams
- Pistachios - 0.5 Cups
- Lemon juice - 1 tbsp. a spoon
- Olive oil - 1 tbsp. a spoon
- Salt - To taste
- Ground allspice - To taste
How to cook "Salad" Beetroot with nuts "
Wash the beets and clean them with a brush. We do not cut off the "tails" - if we do this, most of the vitamins will go into the water during cooking, and we do not need it at all.
Cut off the tops, wrap the beets in foil and bake in the oven until tender (check by sticking a sharp knife - if it comes in easily, then the beets are ready). You can boil the beets, of course, in the old fashioned way, but then they will be "wet" and not so fragrant.
While the beets are baking, grind the pistachios with a knife or in a mortar. You can use ready-made pistachio flakes.
Cool the finished beets and peel them.
We cut - into thin slices or deliberately careless slices, as you like.
But it is advisable to cut the goat cheese as thin as possible - almost transparent petals, so that it melts in your mouth. Although, as practice shows, men like heavier pieces more;)
Put the beets on a dish, sprinkle with olive oil and lemon juice, sprinkle with salt and pepper. We put slices of cheese on top and sprinkle all this miracle with pistachios.
