How to cook "Baked Sterlet"
Gutting the sterlet and cutting out its gills, they can give bitterness. Now we heat the water in a saucepan, and when it boils, pour boiling water over the fish from all sides. We scrape off small scales with a knife, and pry off the large ones and tear them off, thoroughly rinse the sterlet under cold water.
Rub the fish with salt and pepper and let it rest for a couple of minutes. Cover the baking sheet with foil and lay out the sterlet. Cut the potatoes into slices and spread them around the fish, salt. Peel the onion and cut each head into 4 parts, put it on a baking sheet. Then put the sliced butter on the sterlet.
