It is precisely such a light, unobtrusive sweetness that would set off the piquant taste of Parmesan that I have always lacked in the classic version of this salad. Therefore, once having used the recipe for making Caesar salad with pepper, I come back to it again and again.
By the way, the tomatoes indicated in the list of ingredients are far from limited to the list of products that can be added to this salad - for example, a handful of olives and a little cheese will be quite appropriate here! And even if the end result is a cross between "Caesar" and Greek salad, the main thing is that it is tasty and pleasant in the soul.

- Sweet pepper - 2 Pieces (preferably multi-colored)
- Parmesan - 50 Grams

How to cook "Caesar salad with pepper"

First of all, you need to cook the croutons - they should cool down properly so that the lettuce leaves are not "cooked". To do this, cut off the crust from the loaf, and tear the crumb, if it is soft, into small pieces with our hands. Yesterday's loaf, of course, is easier to cut. Place the slices of bread on a baking sheet, drizzle with butter and bake until golden brown in the oven.

Squeeze lemon juice.

Separate the yolks from the whites. If you are unsure if the eggs are safe, heat the yolks in a water bath or use quail eggs.

Peel and grind the garlic in a mortar with salt and pepper. Whisk the sauce with a whisk or mixer on low speed and add the mustard, lemon juice and eggs. Continuing to beat, gradually add butter to the sauce.

Wash the pepper, remove the seeds and cut into cubes.

We also wash the salad well, dry it (this is a must!) And pick it up with our hands.

Pour the sauce over the salad leaves and mix gently.

Put croutons and pepper slices on the salad. Drizzle with the remaining sauce and sprinkle with grated Parmesan. Decorate with tomato slices if you feel sorry. The salad is ready - bon appetit!
