Cooking description:
Chill the butter and chop it with a knife, then mix with flour and sugar to make the mixture look like crumbs. Add water to it, then knead the dough from which you want to form a ball, and then wrap it in cling film and send it to the refrigerator for half an hour.
Once the dough has cooled down, roll out a layer about 3 mm thick and place it in a mold with a diameter of 20-22 cm. Make bumpers around the edges. The dough at the bottom is pierced with a fork and covered with parchment. Dried peas are poured into the mold and the cake is baked at 200 C for 20 minutes. After that, the peas with paper are removed, and the cake is cooled.
The cheese is wrapped in a towel and wrung out. Mixed with honey, starch and sugar, zest is added. Bake the filled pie for 50 minutes at 175 C.
