Combine the honey with the soy sauce until the honey is completely dissolved in the sauce. Rinse the duck thoroughly, then brush it with the prepared sauce and send it to a cool place for 5 hours to soak it.
The apples are cut into small slices, after which the bird is filled with them, which is then placed in a saucepan. Pour the remaining sauce through the abdominal hole where the apples were previously placed, after which this hole should either be sewn up or fastened with wooden skewers.
Roast the duck in an oriental style for an hour and a half under a lid at a temperature of 230 C. Drizzle with the juice that stands out from time to time. Serve with brown rice and green onions.
