Place potatoes in a large saucepan, cover with water and bring to a boil.
Cook until the potatoes are tender, 15 to 20 minutes.
Puree the cooked potatoes in a blender or food processor.
You can add seasoning to the puree if desired.
For maple oil: Add 2 tablespoons ghee and maple syrup to the puree and stir.
For ginger: add 1/4 cup milk, 2 tablespoons ghee, 2 teaspoons chopped fresh ginger, and stir.
For cayenne pepper: Add 1 tablespoon lemon juice and a pinch of cayenne pepper.
Season with salt and pepper.
