How to cook "Beef liver shashlik"
Peel and chop the onion and garlic. Wash the pepper and chop finely, removing the seeds. Remove the zest from the lemon with a grater, squeeze the juice from the pulp. Remove a thin film from the liver. Cut the liver into strips 3 cm wide.
Mix chopped onion, garlic, pepper, mint and cilantro with vegetable oil. Add lemon zest and juice, salt and black pepper. Put strips of liver in the marinade and leave at room temperature for 1 hour. Stir from time to time.
Prepare salsa. Wash peppers and tomatoes, place on a baking sheet, sprinkle with 1 tbsp. olive oil and put in an oven preheated to 200 C for 10 minutes. Transfer the tomatoes to a dish, and cook the peppers for another 10 minutes. Transfer the peppers to a bowl, cover tightly with plastic wrap and let cool.
Meanwhile, peel and chop the garlic. Wash the greens, disassemble into leaves and chop finely. In a bowl, combine mustard, vinegar, olive oil, garlic and herbs. Season with salt and pepper to taste.
Peel and core from tomatoes and peppers. Cut into medium-sized pieces. Add to bowl with dressing. stir and refrigerate for 30 minutes.
Strips of liver, without drying from the marinade, string on wooden skewers and fry in a hot pan or grill, for 3 minutes. from each side. Serve with salsa.
